Chocolate Chip Blondies

You know how it is. As your kids get older, it is harder to get the whole family together for a meal. Two of my sons no longer live at home, and one of them is married. They have busy lives as do my husband and me and our youngest son. Even though we are all busy and going in many different directions, we try to get together as often as we can. Since we all love to eat and we enjoy playing games, we have begun to have a monthly “family game night.” During these get-togethers, we have a meal and play games.

I like to have dessert for these family dinners/game nights, and I recently made these Chocolate Chip Blondies. I also made brownies and was surprised when the blondies were a bigger hit than the brownies. Next time, I will make a double batch of blondies!

Not only are they delicious, they are quick and easy. They also are made with ingredients you probably already have on hand.

Ingredients

1 c. salted butter, melted and cooled

1 1/2 c. light brown sugar

2 large eggs

2 tsp. vanilla extract

2 c. + 2 T. flour

1 T. cornstarch

1 1/2 c. chocolate chips

First of all, make sure you use butter and not margarine. They won’t turn out right if you don’t use butter. Also, the recipe calls for salted butter. If you only have unsalted, you can use that, but you will need to add 1/2 tsp salt when you add the flour.

Preheat your oven to 350 degrees (F). Mix the melted butter and sugar. (You can use a mixer or mix it by hand). Add eggs and vanilla. Stir in flour and cornstarch. Fold in the chocolate chips. Pour into a 9 x 13 pan sprayed with cooking spray. Bake for 25 to 30 minutes.

Be sure to cool them completely before you cut them into squares.
