Strawberries are in season, so it’s time for all things strawberry. My family loves strawberries and they love pie, so for them, it doesn’t get any better than this yummy strawberry pie.
You will need to start with 3 cups of strawberries. Wash, hull, and slice 2 cups of your fresh strawberries. You will need to crush the remaining cup. I use a food processor for this step. You can also use a manual chopper or crush them by hand. Set the strawberries aside.
Next, you will need to prepare a pie crust. You can make homemade pie crust or use a store-bought crust. Once you have placed the pie crust in a pie plate, prick the pastry all over with a fork.
Bake the crust on an upper shelf in a hot oven (400°F) and cook for about 15 minutes or until lightly browned. Cool the shell thoroughly before adding the filling.
Once the pie crust has cooled, place the sliced strawberries in the pastry shell.
The next step is to prepare the glaze that will go on top of the sliced strawberries. Take the cup of crushed strawberries and place them in a medium-sized saucepan. Combine 1/2 cup water, 1 cup of sugar, and 2 1/2 tablespoons of cornstarch in a mixing bowl. Add this mixture to the strawberries in the saucepan.
Cook on medium heat and stir frequently. Bring the mixture to a boil and boil for 2 minutes or until the mixture is clear. Remove from the heat and stir in 1 tablespoon of butter and a few drops of red food coloring. Use enough red coloring to give the glaze a bright color.
Spoon the glaze over the strawberries in the pastry. Make sure to cover the strawberries completely.
Cool before serving. Once it is cooled, I refrigerate it for 2 to 3 hours and serve it cold. Top each slice with whipped cream. I use Reddy Whip.
