Baked Potato Salad

There are many ways to make potato salad, but his one is definitely my family’s favorite. My extended family loves it as well, so I usually make it for family dinners.

I always use red potatoes for this although you can use whatever potatoes you have on hand. I like to use red potatoes because I don’t have to peel them which saves time and also tastes great!

Ingredients

8 c. red potatoes

1 T. salt

1 (2.5 oz.) Real Bacon Pieces

1 (6 oz.) can large black olives, sliced

2 c. shredded cheddar cheese

1/2 c. green onions, chopped

1 c. sour cream

Additional Salt as Needed

Paprika

Additional shredded cheese

Directions: Start by washing the red potatoes and cutting them into bite-sized pieces.

Place them in a large pot, cover with water, and bring to a boil.

After the potatoes begin to boil, cook them for about 5 minutes or until they are just done. Try not to overcook them because that will make them too soft. Once they are done, drain them and place them in cold water to cool. To cool them faster, you can add some ice to the water. Once the potatoes are cooled off, add the bacon pieces, black olives, cheese, and green onions. Add additional salt to taste.

Once you have added all the ingredients, stir in the sour cream. Sprinkle the top with paprika and a little more shredded cheese. Chill for 2 hours before serving.
