Easy Fruit Salad

One of the reasons I love this fruit salad is because it is so colorful. (My family thinks that’s weird, but I like for food to be both pretty and delicious).

Not only is this fruit salad pretty and delicious, it is also healthy! Best of all, it comes together in just minutes.

Here is what you will need. . .

3/4 c. canned pineapple chunks, drained, reserving juice

1/2 c. pineapple juice

1 T. cornstarch

1 (3 oz.) banana, sliced

1 kiwi fruit, chopped

1 c. strawberries, chopped

1 small apple, chopped

2 pkgs. stevia (optional)

Prepare the fruit and mix together in a large mixing bowl. Set aside.

Using a small sauce pan, mix together the pineapple juice and cornstarch. (To avoid lumps in the juice, mix the cornstarch with a little water before adding it to the juice). Cook over medium heat, stirring frequently for about 5 minutes. Remove from heat and add the packages of stevia if you are using them.

Pour the juice mixture over the fruit. Chill before serving. Serves 6.
