Easy Side Dish

As the days get longer and the temperatures climb higher, my family prefers something cold for dinner rather than something hot. I love this easy creamy slaw because I can make it ahead and pull it out of the fridge when we need it.

I love cabbage because it is healthy and because there are so many delicious dishes you can make with it.

My family loves slaw, especially in the summer, and I make several different kinds. This slaw, which I have dubbed “Creamy Summer Slaw,” is their favorite.

Ingredients

1 head of cabbage

1/4 cup red onion, chopped (about 1/4 of a large red onion)

1 (5 oz.) container Feta cheese

1/4 to 1/2 c. mayonnaise

Directions

Start by cutting up the cabbage. You will need to use a knife for this rather than a chopper or food processor which will cut the cabbage too fine. You want this to be in bite-sized pieces, but not too small. Place the cabbage in a large mixing bowl.

Chop the red onion. You can either chop the onion a little finer or chop it into bigger pieces. How finely you chop the onion is up to you. Do it the way your family prefers it. Add the onion to the cabbage.

Stir in the Feta cheese. Add salt and pepper to taste. Cover or put in an air-tight container and refrigerate. Chill for at least 1 hour before serving. You can make this ahead of time and pull out when you need it.

Just before serving, stir in 1/4 cup of mayonnaise. You can add more if you prefer it creamier. I usually use 1/2 cup because my family likes it super creamy. You will also need more if you have a larger head of cabbage.

This slaw is a great side to grilled chicken, hamburgers, brats, hot dogs, or sandwiches.
