It just doesn’t get much easier than this tasty Polynesian chicken. You can make on your stove top, but it’s so easy to throw it in the slow cooker and forget about it for a few hours. It makes a great weeknight meal but is also great for a weekend meal with the whole family or even company.
I love to use this for a Sunday dinner because I can get it in the slow cooker in about 15 minutes, and when I get home from church, it is done!
To make this super-easy, I use frozen peppers and onions and canned tomatoes and pineapple.
Ingredients:
4 boneless chicken breasts
1 (20 oz.) pkg. frozen pepper and onion blend
1 (20 oz.) can pineapple chucks or tidbits, drained
1 (10.5 oz.) can diced tomatoes, drained
2 T. extra virgin olive oil
1/4 c. brown sugar
salt to taste
Directions:
The first thing you need to do is cut the chicken into bite-sized pieces. Add the olive oil to a large skillet and saute until the chicken is white and even slightly browned. It doesn’t have to be cooked completely at this point because it will finish cooking in the slow cooker.
After you saute the chicken for about 10 minutes, add it to the slow cooker insert.
Add the frozen peppers and onions. Drain the pineapple and tomatoes well then add each can on top of the peppers and onions.
The last ingredients you will add are the brown sugar and the salt. I didn’t put a specific amount of salt because tastes vary so much. I used a teaspoon, and we added a little at the table.
Serve this Polynesian chicken over rice.
