Beef Burgundy and Mushrooms

This recipe is easy, but it is not as “quick” as most of the recipes I share here. Most of my recipes only require about 15 minutes of prep time. This one takes about 30 minutes, and it needs to cook for 30 minutes, so you will need to allow at least an hour to prepare this meal.

Beef Burgundy is a great dish for a family dinner or a special dinner party. I often use it as a Sunday dinner for the family.

This dish is best served over rice, so start your preparations by starting the rice. You can prep the beef burgundy while the rice is cooking.

Beef Burgundy Ingredients:

1/4 c. water

2 T. flour

1 (10 oz) can beef broth

2 T. dry red wine

1/2 tsp. Worcestershire sauce

3/4 tsp. sugar

Nonstick Cooking Spray

1 1/2 tsp. olive oil

1 (16 oz) pkg. fresh mushrooms, sliced

4 cloves garlic, minced

1 lb. beef sirloin, cut into thin strips

1 Bay leaf

1/2 c. chopped green onions with tops

1/4 c. chopped fresh parsley

Salt and pepper to taste

TIP: This recipe uses a lot of ingredients. Gather all of them before you begin your preparations.

Directions: Combine water and flour in a small bowl and whisk until smooth. Slowly whisk in beef broth, wine, Worcestershire sauce and sugar. Set aside.

Spray a large skillet with nonstick cooking spray. Add oil and heat slightly then add mushrooms and garlic. Cook for 2 minutes. Reduce heat to medium-high. Cook 3 to 4 minutes or until tender. Pour into a separate bowl and set aside.

Re-coat the skillet with nonstick cooking spray. Brown sirloin strips over high heat 2 to 3 minutes. Add green onions, bay leaf, mushrooms, and broth mixture Bring to a boil. Reduce heat to medium-low; simmer, uncovered, 30 minutes or until the meat is tender. Be sure not to cover the skillet. Leaving it uncovered as the mixture cooks will help it to thicken.

Remove from the heat and discard the bay leaf. Add the parsley. Sprinkle with salt and pepper to taste. I did not include a specific amount of salt because cooking wine has salt added to it. Your dish may already have enough salt depending on the cooking wine you use. I used Holland House Red Cooking Wine and had to add about a teaspoon of salt. You may not need to add that much, so be sure to taste it before adding salt.

Let your Beef Burgundy stand for 5 minutes before serving. Serve over rice. I usually serve this with a vegetable side dish and rolls.

This recipe serves 4 people. You can double or triple it depending on the number of people you are serving.
