This is one of my family’s favorite meals and one we have regularly. It is tasty, quick, easy, and affordable. You need to try these delicious enchiladas!
Here’s what you will need. . .
2 1/2 c. sour cream
2 c. cooked chicken, cut in small pieces (You can use canned chicken. I used my home-canned chicken).
1 small onion, chopped
1 (4 oz.) can green chilies, chopped
1/2 tsp. chili powder
1/3 tsp. garlic powder
1 1/2 c. Mexican blend cheese
1/2 tsp. salt
1/4 tsp. pepper
12 tortillas (If you want to make these gluten free, use corn tortillas).
Putting It Together. . .
Spread 1 cup sour cream in a 9 x 13 baking dish.
In a medium mixing bowl, mix chicken, chilies, 1/2 c. sour cream, onion, and seasonings.
Next, you will need to assemble the tortillas. Place about 1/4 cup of chicken mixture and some cheese in the middle of a tortilla and fold in the sides. Place seam side down in the baking dish.
Pour the remaining sour cream over the enchiladas and sprinkle the remaining cheese on top.
Bake at 400 degrees F for 8 to 10 minutes.
Top with salsa. Serve with Mexican rice.
